Slurry ice is ideal method for rapid chilling of fishes on board with the microscopic ice crystals surrounding the entire surface area of fish body being cooled at least three times faster and stored a few degrees colder than conventional ice. It ensures not only the rapid cooling but also the optimal temperature (HYO-ON) range for aging fishes.

HYO-ON is the temperature range which fishes are exposed to stress in the temperature zone below freezing and forced to secrete Amino acids and sugars to prevent freezing. These antifreeze substances become the secret mechanism of producing umami.
To maximize the umami, “KAIHYO”, a slurry ice generator, was developed in compact perfectly fitting in small and medium-sized ships. Especially, the Model NCK-105WH can be installed on small fishing boats of 19 tons or less.

The key advantage of KAIHYO is the direct production of slurry ice from seawater offering a great deal in adjusting the ice production based on the actual fish catches.
Since it had been difficult to predict the landing amount, there had been excess loading of ice and the workforce for loading the ice.
Thus, the direct production of ice on board is contributing not only the reduction of workforce but also saving fuel consumption by avoiding excess loading of ice.

Freshness

A pacific saury preserved in our silky slurry ice retained the body surface in blue while a conventional slurry ice hardly retained the original color.

Due to the low salinity of crushed ice, this blue color was disappeared because the salinity 3.0% was required to maintain the blue color.

The umami ingredients are roughly divided into glutamic acid and inosinic acid (IMP). The balance of these two makes the fish delicious. 

The K value indicates a freshness rating based primarily on the enzymatic breakdown of adenosine triphosphate (ATP) to ADP and IMP, etc.

Lower the K value, the higher the freshness level.

Key point of maintaining the deliciousness is to delay rigor mortis time and to suppress the ATP degradation while still rigid by storing at the lowest temperature possible.

The figure below shows the temperature change recorded by dipping in crushed ice (0 ℃), seawater ice (-1.5 ℃) and slurry ice (-2.5 ℃) for Pacific sauries.

Body temperature change

Crushed ice is fresh water ice directly contacted to the fish body remaining a space between the fish body due to the large ice particles. There is also a method of cooling the fish by mixing the crushed ice with seawater.
In this case, the sea ice floats on the surface causing a temperature difference between the upper and lower sides of the storage tank. Slurry ice is salted ice made by freezing seawater. Due to the salinity, the temperature is lower than that of crushed ice keeping the temperature below 0℃.
